I am a kindergarten teacher and want to plant some vegetables (from seed) with my class. I will be teaching them about plants for 3 weeks. I'm wondering which vegetables would grow within that time frame.

Radishes are the fastest-sprouting vegetables, and they reach maturity within about 25 days.The Easter Egg variety has oval radishes in shades of purple, pink, rose, and white, and is fun for kids. Burpee offers the seed (www.burpee.com if you can't find it locally). Leaf lettuces will sprout and be "baby lettuces" in that time frame, but don't reach maturity until about 45-50 days.
