In my sad experience hungry deer will learn to eat just about anything, so I would never consider any plant completely safe. Deer in different areas have learned to eat different plants, too, so the resistance factor is somewhat localized. You might check with your neighbors to see if it has worked for them, or you might try a test plant or two and see what happens. Alternatively, the safest and most effective solution over time to a deer problem is to put up a fence.
