I recently bought a plant, listed as tropical foliage. it has large green "elephant-like" leaves, bright pink flowers with large white/green "rod-like" centers.

Could you tell me what this might be? It is suggested that you use med. light, 8-10 hours daily interior light, evenly moist soil.

I'm guessing that your plant is Zantedeschia rehmannii 'Superba', also known as Calla Lily. Not many flowers have a trumpet-shaped flower with such pronounced spike in the center!
