What fertilizer would be the best to use on a pieris japonica (Dorothy wyckoff) that is already established??

For Pieris japonica you might use a fertilizer specifically formulated for acid-loving plants such as azaleas, camellias and rhododendrons according to the label instructions for mature plantings. A top dressing of compost each spring and a steady layer of two to three inches of organic mulch year round should also help to feed the soil around the plant and maintain the high level of organic matter it prefers.
