I would like to know when is the best time to plant potatoes. Can they be done within the next 2 weeks since you plant them underground?

Potatoes can be planted very early, well before the last average frost date. The tops will tolerate some frost and the tubers grow and form best at cool soil temperatures (about 60 degrees) so it is important to plant them early. In my garden, I plant them about six weeks to eight weeks before the expected last frost.
