Some of your seed packages indicate they can be started indoors and others do not. Would it be ok to start vegetables such as carrots, beets and onions inside as well?

Beets and onions can be started indoors, but carrots seem to resent transplanting and so are usually seeded in the garden. You might try it and see how it works for you, though.
