My Ruhbar, for the second year in a row, has begun to grow this spring and started to send up a seed pod or has started to bolt. What should I do with it ? Cut it off or just leave it go ?

Most gardeners cut it off to preserve the plant's energy rather than allow it to set seed. Use a knife to cut it off at the base of the stem.
