Plant roots that are grown in water are not well suited to being planted in the soil, so the plant undergoes an adjustment period when you transfer it. It then grows new roots into the soil. Since ivy roots easily in a damp soilless potting mix, you might try rooting them in that instead of in water. This way you can avoid that difficult transition.
