Answer: You can harvest some of the greens, but you always need to leave some leaves to produce sugars for the plant and feed the roots. Don't harvest more than a third of the leaves at one time. After harvesting, new leaves will usually sprout from the center of the beet. If you really love beet greens, you might consider growing Swiss chard, which is a beet that was developed only for its large, delicious greens - it doesn't produce a beetroot.
