When do I harvest cauliflower -- when it is the size it is in the grocery store? I searched your question bank and found out about "blanching" or tieing the leaves loosely to cover the head so it won't turn yellow (thanks). Mine are now the size of a big softball.

Mature heads can range in size from 6" to 12" across and should be harvested when the buds are still tight and unopened. If you wait too long, the flavor will be compromised. Most cauliflower will mature 70-80 days after planting. You may want to experiment a little with your crop and harvest one now to see if it's mature. Enjoy!
