My brussels sprouts are about 27 inches tall and a couple of the plants are starting to bend. How tall will they get and will it be nessary to support them?

Brussels sprouts are normally grown as a fall crop, so your plants may be suffering a bit in the heat and losing vigor as a result. (You might also check them for water stress.) In my experience they do not survive the summer heat, but, if they do, these plants will continue growing taller and may topple, so you could stake them. I'd use about a three foot stake since they are already so tall.
