type of penenials which deer will not eat. Alos are there any plantings [annuals or pernninals] which inhibit deer encroachment?

Deer are very adaptable animals and seem to learn to eat almost anything in time. Although you will come across supposed lists of deer proof plants, in my experience they are not very reliable, especially if there is a heavy deer browse problem. The best list for you is to ask your neighbors what is safe so far and work with those plants. Deer are also creatures of habit and will browse the same area again and again so if you are on the munching trail, you may want to consider a fence. In my experience, this is the only reliable long term solution to the problem.
