Our cauliflower for the past two years has a bitter tast. What is the cause

One cause of bitterness is slow growth--often caused by a lack of water. So be sure to keep plants well watered throughout their growing season. You could experiment with your soil theory by creating a raised bed, bringing in a load of topsoil from another source. Also, hot weather will turn cauliflower bitter. So it is really important to get them in the ground as early as possible and to begin harvesting as early as possible. Cauliflower is also grown as an early fall crop for this reason. In addition, I would suggest mulching to keep the soil cool.
