| Usually gardeners will pull carrots to eat beginning as soon as they need to thin the row, and then continue harvesting while the carrots grow toward mature size. You can harvest as soon as they are big enough to eat (baby carrots are delicious) and then, using the "days to maturity" as a guide, make sure to harvest the rest before they turn woody or pithy. |
