I've grown artichokes with great success for three years. This year I have 9 chokes on one of my plants but all of them are formed already opened. I did transplant the bush. Help?

It sounds to me as though your plant was stressed just enough by the transplanting to react in a weird way. Cut back the flowering stalks but allow the foliage to continue growing. You probably won't get a second crop of 'chokes on your plant this year but by next year it will have settled down enough to produce edible 'chokes.
