Yellow Thistle - Knowledgebase Question

While at my sister in laws for the fourth of July. I saw a plant similar to a thislte. But it had a yellow tuft flowering. It looked similar to the shape of a pineapple, the flower head. She couldn't remember what it was nor can I find it in any of my catalogues. If someone knows of this variety of plant please let me know. It was very unique looking.

It is possible she had planted Centaurea macrocephala--Globe Centaurea, a large perennial with yellow flowers.
