What catagory does Rhubarb fall under? Vegetable or fruit?
I've heard people refer to rhubarb as both.

Well, there's an official horticultural answer, and then there's a common usage answer. Botanically speaking, rhubarb is a vegetable because you consume the stalk. If the plant produced a fruit (fleshy ovary containing seeds), and that's the part you ate, it would be considered a fruit. However, we generally cook the stalks and eat them sweetened, which makes us think rhubarb is a fruit. Hope that clarifies things for you!
