The Q&A Archives: Tomatoe Paste

Question: I have a large supply of Roma tomatoes and other varieties of tomatoes in my garden and was interested in making tomatoe paste. Do you have a recipe for making paste.

Answer: Your county extension should be able to help you with the best and most up to date procedures for processing tomatoes. Their telephone number is 421-6430. You might also find the "Ball Blue Book" helpful, it is generally sold on the store shelf next to Ball brand canning supplies such as jars and lids. The National Food Safety Database web site

includes instructions about canning, drying and freezing produce, too.
