I planted your mammoth sunflowers and they are doing great, but I have a 8 foot sunflower with two heads. Is that normal? They always say two heads are better than one but is mine normal, or do I have one of a kind?

What you have is not normal. A bit of a mutant, I'd say! Since the stalk is supporting two flower heads, the flowers will probably be smaller. Other than being a little odd-looking, the flowers should develop fully and produce edible seeds.
