Will California Poppies and/or Gazania grow well in acidic soil? I'm thinking about growing them under a mature southern pine.

Gazania will grow in most any soil. California poppies (Eschscholzia californica) are native to alkaline soils and dry conditions. They'd need excellent drainage to survive in your more humid climate.

Finally, both of these need full sun to thrive and bloom. If conditions are shady under the pine, that will be a limiting factor.
