This is my first year growing nasturtiums in my window boxes. I have beautiful and numerous blooms. After each flower blooms and dies off, what is left is a green pod-like structure and the stem curls. What is this?

Congratulations on your success! These would be the seed pods. You can remove them to keep the plant looking tidy. Just snip with a scissors or sharp pruner.
