I wanted to know which sunflowers are good for sunflower playhouses, I know the mammoth and Paul Bunyan Hybrids would be good, but I was also wondering about the Strawberry Blonde Sunflower.

The taller sunflowers are usually recommended so that they will not interfere with the play space by branching. The somewhat shorter and branching plants with multiple flowers might encroach on the interior of the fort, but apart from that there is no reason not to use them. You might plant them as a second exterior wall to fill in and create more of a floral effect around the "building" but still use the ordinary tall ones for the structural walls on which the morning glories grow.
