The Q&A Archives: What Causes Green Marks on Potato?

Question: The I dug up a few potatos this year and found a few had green marks on them. What causes this? Also is this poisonous to eat?

Answer: If potato skins are green, it's usually because they got hit with some direct sun, which caused chlorophyll to form. Tubers are mildly poisonous at this stage, but you'd probably have to eat an awful lot of them to get sick. If you have just a small green patch on the surface, cut it off. The rest of the potato should be fine.
