How can I know when carrots are ready to harvest?

In my opinion, the best method is the taste test! Carrots can be harvested anytime after their roots form, but they'll be sweeter if left in the ground longer. Determine how many days to maturity for the variety you planted. (This info is usually found on seed packets or catalog descriptions. Days to maturity can vary depending on your specific growing and weather conditions.) Around that time, poke around with your finger in the soil to find the larger carrots and pull those first. That will make room for smaller carrots to continue growing. Also, carrots sometimes stick their shoulders out of the ground as they grow, and you can judge the diameter of the carrot by looking at it. Enjoy your fresh sweet carrots!
