What is the best way to store fresh carrots and parsnips?

They are best stored in a cold and moist environment, without their tops. Cold and moist is defined as 32 to 40 degrees F with 95 percent humidity. Root cellars are great, or store in perforated bags in the refrigerator. Parsnips will usually sweeten after two weeks at 32 degrees. Enjoy your veggies!
