Fast-growing Vegetables - Knowledgebase Question

I am doing a science fair project and need to grow a vegetable within two months. I would prefer this to be an above ground vegetable so I can watch it grow. Do you have any suggestions? Thank you!

Beans are often used for experiments as they grow fairly quickly and are a sturdy plant, although it may not produce beans within your time frame. Leaf lettuces are also fast growing. Vegetable packets and catalog descriptions will have "Days to Maturity" listed which will help you choose something that will grow within your time frame. Good luck!
