Could you please tell me if you should cover a stonecrop 'autumn joy'for the winter or leave exposed.

Sedums in general are very winter hardy. You may trim off the old stems (unless you like the look of the faded flowers covered with snow), and you may mulch around the crown, but it is not necessary to mulch over top of the crown for the winter. This is one of the easiest plants to care for.
