My beets will come up and start to grow. after a few days the tops seem to disappear leaving only a little shoot, looks like a toothpick sticking up. This has happened for the last two years. I replant and the same thing happens. I have put compost from both the intervale and VT compost on quite extensively. Garden test by UVM show I have plenty of fertilizer and lime. Any help would be appreciated.

The damage you are describing sounds like it may be caused by slugs; they dine at night so you would not see them. You would however see slug trails of slime near the plants. You can battle slugs by hand picking at night, with beer baited traps, or by encircling the plants with horticulture grade Diatomaceous Earth used according to the label instructions.
