I have read used coffee grounds are good for the compost pile. In what quantity do you add these and can you put them directly in the soil around plants? What does it actually do or provide for the plants? I can get them in large quantities, should I?

Coffee grounds are a good source of nitrogen. They are great added to the compost pile in any quantity, as long as you have some carbon sources to go with (such as dried leaves, shredded newspaper, straw). You can add coffee grounds directly to the soil, but I wouldn't recommend it in great quantities. If you have a compost pile, they'd be better there, so they can break down further before being added to the soil.
