The baby corn cobs that are found on salad bars...is there a seed for this vegetable, or is it just corn that is picked early?

That tiny corn is just regular corn (sweet or others), that is harvested early. Some varieties are better than others at producing multiple ears, so you get more baby corns per stalk. These include some of the older, open-pollinated varieties like Burpee's 'Early Sunglow'.

Harvest before the corn plant is pollinated, 2 to 4 days after the first silks appear. Plant the seeds close together, only 2 to 3 inches apart, to encourage side shoot growth. You may get up to 10 to 12 tiny ears per plant.
