We want to avoid cross-pollination of heirloom vegetables. How far apart should we plant them?

This depends on the plants you are growing and whether or not you plan to save seed. If you do not plan to save seed, then it is not a problem. Seed savers use many methods, such as hand pollinating the best plants and then covering those flowers to prevent subsequent possible pollination form other sources. This method assures you are saving seed from the best plants.
