What heirloom or old standard varieties of tomatoes have higher levels of acidity? Most varieties I've tried recently just don't have the presence of those I recall from my childhood down South in Georgia.

Tomatoes and taste seem to be very personalized, and our taste buds also seem to change as we age. I also personally believe the flavor depends to some extent on the soil and the season as well as the variety. The flavor seems to come from both sweetness and the acidity combined, so you might try some of these and see what you think: Bucks County Hybrid, Brandywine, Black Krim or Bloody Butcher.
