You can expect the older leaves of your gardenia to turn yellow and fall off as a natural course of events. New leaves generally take their places. If newer leaves are yellowing, it could be a sign of underwatering, and you should make more of an effort to keep the soil moist. Gardenia's like moist, but not soggy soil, and if the plant is outdoors, it may need to be watered every day. Gardenia's thrive when fed at regular intervals during the growing season. Use an 8-12-4 every 3-4 weeks to promote lots of blooms and to keep the leaves a glossy dark green.
