The ground under my maple trees is filled with roots which come right up to the surface. The only thing that seems to grow is moss. I can't dig and I was told raised beds wouldn't work either. What should I do? Taking down the trees and chopping up the roots seems like a major expense and headache.

In some cases it really is just about impossible to garden beneath these trees due to their roots and the shady, dry conditions. You might try using large containers such as half barrels filled with shade loving annuals, add an attractive bench, and perhaps a small fountain or similar ornament to make the area more attractive and allow you to enjoy the shady area beneath the trees.
