We transplanted some tomatoes and cucumbers that we had purchased in 4" pots. On some of them, the leaves have turned very light green to white within a few days of transplanting. One of the tomato plants is improving. What is causing this? How can we prevent it and/or fix it.

Juvenile plants are subject to sunburn when first transplanted into the garden. Shading them for a few days right after planting can help avoid sunburn, but plants usually overcome the problem on their own. Your plants will outgrow this condition and there's nothing special you need to do.
