When is the best time to harvest green onions? I'm referring to those with long green stalks and small round white heads.

Bunching onions, or scallions, are generally ready for harvest about 45 days after planting. The best way for you to judge whether your crop is ready to harvest is to pull an onion. The white area just above the roots should be cylindrical to just barely bulging. If you leave the onions in the ground they will continue to produce a bulb. This is okay, too, but I think the flavor is best when the base of the onion is about pencil-thickness.
