Quite a few of my horseradish plants have grown flowers. How will this affect the roots? Is there something I should do about it to insure a good crop?

Simply deadhead, meaning trim away, the flowers and their stems. Horseradish is such a rampant grower there isn't much you would need to do to ensure a good crop.
