You can tell what's going on underground by observing the aboveground parts of your potato plants. After planting your seed potatoes, stems will sprout and leaves will develop. The leaves are capturing sunlight and converting it into carbohydrates, which are stored in the roots. Tubers will begin to develop at about the same time that the tops of the plants develop flowers. You can harvest small "new" potatoes at this time. For larger tubers, wait until the foliage yellows and dies down at the end of the summer. Then dig and store your potatoes. |
