I planted escarole on May 15th, How can I tell if it's ready to be picked? What is the approximate lenght of time it takes to grow?

Mature size would take about six weeks, but you can pick it as soon as it is large enough to eat, and you can eat any thinnings you pull in the meantime, too. This is a cool season crop and will bolt (go to seed) quickly in summer heat, so you may want to consider replanting it as a fall crop, too.
