Would the pink jasmine survive New Jersey winters? I am interested in planting a long row of them to cover a chainlink fence.

Unfortunately, pink jasmine would not be hardy for you. To cover chainlink you could consider other hardier flowering vines such as clematis (the fall blooming sweet autumn clematis is a large vine and would cover a large area quickly) or perhaps trumpet creeper (Campsis radicans) or annual vines such as morning glories.
