I have a pine plant shaped in a bonsai. It received too much heat over Labor Day and now appears dead. Should I trim it completely down or wait for new growth to appear?

I'd wait for signs of life before trimming it back. The branches themselves might be alright and the plant simply dropped needles due to heat stress. It's possible that the branches will produce replacement needles. If you don't see any new growth in a few months, cut back the branches until you find live wood (as indicated by green tissue directly under the bark). Hope your bonsai recovers!
