Sometimes called the 'Oyster Plant', salsify is grown for its edible root. It's biennial in nature, grows to about four feet tall, likes full sun and moist soil. If you allow yours to flower it will set seeds that you can harvest and plant the following season. Seeds are available through Pinetree Garden Seeds, Box 300, New Gloucester, ME 04260, Ph# (207 926-3400.
