How can I find out how to grow and care for Alfalfa Sprouts? I need to know how to water, space, etc., for them.

Great idea! Hummus and alfalfa sprout pitas are one of my favorites! Sprouts can be grown in different ways. I have a relative who has been growing them since the 60's and her method of choice is using a "sprouter". You can purchase sprouters from the following website: www.dhi.com/sprout.html. If you don't want to purchase a sprouter you can also try the following. Obtain seed that has not been treated with fungicides. Many mail-order seed companies treat their seeds - look for "organic" seed. You can obtain organic alfalfa seed from Under the Sun Natural Foods at www.undersunfoods.com/. Sprinkle about 2 tablespoons of seed into the bottom of a canning jar and cover them with warm water. Cover the top of the jar with a piece of clean cheesecloth or a stocking and secure with a rubber band around the rim of the jar. Soak the seeds overnight. The next morning, drain the water and rinse the seeds with cool water. Keep the jar in indirect sunlight and repeat the rinsing 2-3 times each day. Start eating after about 3-4 days and keep them in the refrigerator once they have mostly sprouted. Enjoy the greens!
