I have used white wood shavings (animal bedding) to mulch our star jasmine for the winter. Will the star jasmine tolerate acid soil from the shavings?

Bedding typically does not contain urine which would be the major concern for your star jasmine. Trachelospermum (star jasmine) is relatively adaptable to most soil types, as long as the drainage is good, so I don't think the extra acidity in white pine shavings will make much difference to your plant.
