What do I do with a dying Nikko Blue Hydrangea that has not been planted? It had beautiful blue flowers until a week ago? What now?

Based on the information in your question I am not sure what has happened to this plant. If it was not watered enough, it would cause the flowers and possibly also the foliage to dry out. I would suggest watering it thoroughly and then planting it as soon as possible. The soil should be kept damp like a wrung out sponge. A spot in morning sun or bright dappled light all day would be best. SOil that is rich in organic matter and somewhat acidic is preferred; it should be evenly moist yet well drained, meaning not sopping wet or saturated. Your retailer and/or county extension should be able to help you determine if you have a site suitable for this particular plant and can help you with amending the soil should that be necessary.
