When should I prune these Achillea, if at all?

Achillea can benefit from deadheading. When the main flowers have faded you can trim them off, leaving the sideshoots to continue to develop. Eventually the side shoots become weaker and smaller and so most gardeners will trim the overall plant back by about half or so. This allows it to regroup and it will usually rebloom strongly again later in the season.
