Are these plants suseptable to rabbits and other animals eating them?

Deer think that azaleas taste wonderful, but rabbits aren't especially interested in them. Rabbits tend to prefer the tender new leaves of annuals and perennials. If you have a problem with rabbits, you may have to cage your favorite plants to protect them from being nibbled.
