Evergreen trees cast a lot of shade and have shallow roots which will compete with other plants for nutrients and moisture so there are not too many plants for you to choose from. I've had good success with vinca minor under pine trees. It is evergreen, flowers sporadically throughout the growing season, and doesn't seem to mind the litter from my pine trees. It may work well for you, too. Enjoy your garden!
