Lacey,

As a honeydew ripens it turn from green to a creamy white or even slightly yellowish. Ripe honeydews when pressed near the blossom end yield a little to the pressure as opposed to unripe ones that are firm. You will also be able to smell the characteristic aroma of a ripe honeydew.
