Either product will lower soil pH; sulfur remains in the soil longer than aluminum sulfate, but aluminum sulafate works faster. You may not have to amend the soil at all for acid-loving plants if you use a peat moss based potting soil and regularly feed your gardenias with an acidified fertilizer (such as Miracle-Gro).
